Extra Credit

Here is my recipe for the veggie stir fry in my how to:
  • 1 tablespoon canola oil
  • 2 tsp sesame oil
  • 1/2 medium onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 (16 ounce) package tofu, drained and cut into cubes
  • soy sauce
  •  1/2 c. sliced celery( substituted for bok choy)( see below)
  • 1 red bell pepper, seeded and cut into strips
  • 1 yellow bell pepper, seeded and cut into strips
  • 1 small head bok choy, chopped (not used)(see above)
  • 1 c. snow peas
  • 1 head broccoli, chopped
  • 1/2 c. teriyaki sauce

Directions

  1. In a small bowl, marinate cubed tofu in soy sauce for about 10-15 minutes.
  2. In a large skillet, heat oil over medium-high heat. Stir in onions and cook for one minute. Stir in garlic , and cook for 30 seconds.
  3. Stir in celery and bell pepper, cooking for about 2 minutes, until soft yet crisp. Stir in broccoli and snow peas, and heat through. Remove from wok.
  4. Add a little more canola and sesame oil. Add tofu, stir until lightly browned.
  5. Add veggies to tofu. Stir for few minutes. Pour sauce over vegetables and tofu. Serve with rice.
