Here is my recipe for the veggie stir fry in my how to:
- 1 tablespoon canola oil
- 2 tsp sesame oil
- 1/2 medium onion, sliced
- 2 cloves garlic, finely chopped
- 1 (16 ounce) package tofu, drained and cut into cubes
- soy sauce
- 1/2 c. sliced celery( substituted for bok choy)( see below)
- 1 red bell pepper, seeded and cut into strips
- 1 yellow bell pepper, seeded and cut into strips
- 1 small head bok choy, chopped (not used)(see above)
- 1 c. snow peas
- 1 head broccoli, chopped
- 1/2 c. teriyaki sauce
Directions
- In a small bowl, marinate cubed tofu in soy sauce for about 10-15 minutes.
- In a large skillet, heat oil over medium-high heat. Stir in onions and cook for one minute. Stir in garlic , and cook for 30 seconds.
- Stir in celery and bell pepper, cooking for about 2 minutes, until soft yet crisp. Stir in broccoli and snow peas, and heat through. Remove from wok.
- Add a little more canola and sesame oil. Add tofu, stir until lightly browned.
- Add veggies to tofu. Stir for few minutes. Pour sauce over vegetables and tofu. Serve with rice.
